When pasta is overcooked, it has absorbed its maximum amount of liquid and sits heavy in your abdomen making you feel sluggish. Pasta cooked al dente (which translates "to the tooth") can absorb more liquid during the digestive process therefore digests more easily. Al dente pasta also has a lower glycemic index so it has less of an impact on your blood sugar levels. When is it al dente? When the the pasta is a little tougher (chewier) than you like it...it will continue to cook as it drains in the colander.
